Summer is here and what better way to cool off but to enjoy a raw healthy not to mention sweet juicy treat. Yes I am talking about watermelon, sweet in flavor, low in calories and always refreshing. Watermelon seems to be like the perfect summer snack, great in salads, juices, smoothies, or enjoyed on its own watermelon makes a great summer fruit.
The perfect and most simple summer salad and refreshing watermelon drink are two of my summer’s essentials. Want to captivate your neighbors during that 4th of July BBQ or have a romantic dinner on a hot summer night, get ready to spend less than ten minutes in the kitchen and enjoy a mouth watering feast.
Rich in water content and electrolytes, melons are nature’s gift to beat the hot summers thirst. Watermelon is also an excellent source of Vitamin –A , a super powerful anti-oxidant. Containing a good amount of potassium, vitamin –B6 (pyridoxine) vitamin-B1 (thiamin) and vitamin C and very low in calories, watermelon is a summer must.
Watermelon Basil Salad (Serving size: 4 people)
½ (3-4 pounds)Watermelon
½ Cup Basil
½ Cup crumbled Feta Cheese
1 lemon juice
½ tsp salt
¾ tsp black pepper
¼ cup extra virgin olive oil
Cut watermelon into 1 inch chunks, place them in a bowl.
In a small bowl, whisk together lime juice, olive oil, salt, pepper
Pour dressing and chopped basil over the watermelon and toss gently
Serve salad into individual plates and pour crumbled feta on top
Enjoy this delicious refreshing salad as a starter to a great meal or as a summer side.
Watermelon Mint Juice (Serving size: 4 people)
½ (3-4 pounds) Watermelon
1 lemon (juice)
1 Mint bunch
Cut watermelon into 1 inch chunks
Place them in juicer, blender, juice extractor
Add lemon juice
Decorate with a couple of mint leaves
Mint leaves will not only serve as decoration, it will also infuse the juice with great smell and a hint of flavor
Pour into individual glasses and enjoy
